Vegetable Chow Mein Recipe / Chinese Noodles

Noodles recipe is very well known as Chinese cuisine. One such delightful, healthier, 
simple and light recipe is Vegetable chow mein. It is very easy to prepare, shred the vegetables as thin based on the principle of exposing maximum surface area so that vegetables gets cooked quickly, retaining the natural flavor and color. Stir fry the vegetables one by one and flavor them with soy sauce, chilli sauce, salt and pepper and toss it with noodles.



Ingredients:

  • Noodles 

~Vegetables

  • Onion - 1 no. shredded
  • Fresh string Beans -  10 to 12 nos.
  • Carrot - 1 cup shredded
  • Cauliflower or Cabbage - 1 cup shredded
  • Capsicum (Any color) - 1 no. shredded
  • Fresh Flat Beans/Broad Beans - 1 cup (sliced)
  • Mushroom - 1 cup 

~ Spicy Ingredients:

  • Garlic - 2 flakes
  • soy Sauce - 5 tsp
  • Chilli Sauce - 2 tsp
  • Pepper - 1 tsp
  • Salt to taste
  • Butter /Oil 

Shredding:
This is one of the typical methods of cutting Chinese food. The vegetables are cut into thin, strips or shreds.

Method:

Step 01) Wash noodles once and boil them for 12 minutes in safe microwave bowl
(The timing differs from brand to brand noodles) Please follow the packaging instruction to get the best results. Make sure not to overcook.

Step 02) Strain the noodles and wash with cold water for 2 to 3 times. Leave them in strainer for 15 - 20 minutes, to ensure complete drying. Apply 1 tsp oil on the noodles


 

Step 03) Heat a tbsp of butter in a big pan in medium flame stir fry the chopped garlic and then add onions. Followed by carrots, cauliflower or cabbage, string beans, broad beans, capsicum and mushroom.(Stir fry each vegetable for 1 or 2 minutes before adding the new vegetables)


 

Step 04) Add soy sauce, chilli sauce, salt and pepper and mix well. 

Step 05) Lastly add noodles and mix/toss them nicely to coat with the dressing. Add more soy sauce for darker color


 

Serving: Serve Hot with Chilli Garlic Sauce.

Restaurant Style Fried Rice

Is your family is fan of restaurant fried rice? Now, no need to take out after you try this one!  It's a quick and easy way to use left over rice and you really can make fried-rice with whatever you have on hand. Keep ingredients all chopped and ready to go and then just had to stir-fry everything. DH loved this & asked me to make again with egg in it :)

Ingredients:
  • 1 cup Uncooked Rice
  • Spring onion - 1 bunch
  • String Beans - 10 to 15 no.
  • Carrot - 1 no. 
  • Capsicum - 1 no.
  • Green Chilies - 2 to 3 nos.
  • Garlic  - 2 flakes crushed/chopped

> Other Spices:
  • Salt to taste
  • Black Pepper Powder - 2 tsp
  • Chili Sauce - 1 tsp
  • Soya Sauce - 2 tbsp
  • Vinegar - 1 tsp (Optional)
  • Sesame seeds Oil - 2 tbsp

Cutting Method of vegetables:

The Chinese style of cutting vegetable is based on the principle of exposing maximum surface area so that food gets cooked quickly, retaining the natural flavor and color.

How to Boil Rice:
1. Clean, wash 1 cup of rice. Soak for 10 minutes
2. Boil 4 cups of water with 2 tsp of salt. Add rice
3. Cook, uncovered, over medium flame, stirring occasionally, until the rice is tender but not over cooked
4. Drain out the water from the rice and let it stand in the strainer until absolutely cold. Then transfer the rice into big plate for 20 mins.

Method:
Step 01) Heat a oil in a big pan in medium flame splutter green chilies, garlic. Stir fry spring onions, leaving the green part

 

Step 02) Add string beans, then carrots, stir fry for about 3 to 4 mins. Add capsicum and stir fry for 2 more mins.

 

Step 03) Add salt, black pepper powder then add rice. Add soya sauce, vinegar and chili sauce and mix well.

 

Step 04) Add the green onions and stir fry the rice for 3 more minutes and serve hot.

 


Serve with extra soya sauce :)

Corn Mushroom Soup

This is a healthy soup to celebrate in Winter days! It is very simple, easy, quick recipe and delicious in taste.


Ingredients:

  • 2 cups Corn 
  • 1 cup Mushroom
  • 2 tablespoons cornflour
  • ½ teaspoon Ajinomoto powder (optional)(Japanese food seasoning - available in Indian store)
  • 2 tablespoons butter (for diet conscious people you can skip this)
  • 2 tablespoons cheese 

To be ground into a paste

  • 1" ginger piece
  • 2 garlic flakes
  • 1 green chilies 

Method:
1. Mix the cornflour with 6 teacups of water. Add the paste, corn and Ajinomoto powder and cook in a  pressure cooker until done. (if you are using the Corn tin then instead of pressure cooker you can cook them in microwave for 8 mins
2. Add the mushrooms, butter and cheese and boil for a few more minutes.

Serving:

Serve hot with Chilies in vinegar and chili sauce

Note: You can use vegetables if you don't like the mushrooms. Vegetables like cauliflower, carrots, cabbage, onions and  french beans and its stock)

Chinese Style String Beans Sabzi Recipe

As I am vegetarian I always look for the veg. items in Chinese buffet too. This one became my favorite. In Chinese Restaurants, they use many sauces I just tweaked it as per my style.


Ingredients:

  • Fresh Green String beans - 15 to 20 nos.
  • Potato 1 grated
  • Dried red chilies 3-5
  • Ginger and garlic paste 1 tsp each
  • Sugar 1/2 tsp
  • Garam Masala Powder - 1 tsp (Mixture of many Indian spices - Available in Indian store)
  •  Oil for deep frying
  • Salt to Taste


Time Required: 15 mins

Method:




Step 01) Heat up a wok with enough oil for deep frying

Step 02) When the oil gets smoky hot, drop the string beans into the oil and quickly fry them, just wrinkled skin of beans is enough, immediately transfer them in to paper towel to absorb the excess oil 

Step 03) In the same pan, add dried red chilies, chopped garlic & ginger paste and saute for 1 min. 

Step 04) Add grated potato, salt, garam masala and stir-fry until potato color turn to little brown & crispy and lastly add the string beans and mix it nicely so that all potato and masalas are coated evenly to beans.

Step 05) Serve with chapati.
