Soya Bean Tikki/ Patty

When we think of tikki, what comes to our mind first is Potato/aloo tikki.  Here is a healthy alternative for Patato and tikki made out of Soya Bean. Soya Bean Tikki/Patty is one of healthy delicious tasty and spicy snack everyone will love to have. This recipe is mainly made of soya bean and used very little potato mixture to balance the taste. For variations in flavor, you can add green peas, sweet corn and chopped carrot and turn it as vegetable tikki.

Ingredients:
Soya Bean – 1 cup
Aloo/Potato 1 no(small)
Onion – 1/4 cup (chopped)
Ginger & Garlic Paste – 1 tsp
Besan Flour/ Chickpea Flour – 3 tsp
Fennel Seeds/Sauf – ½ tsp
Red Chili Powder – 2 tsp
Hing/Asafoetida – ¼ tsp
Garam Masala Powder – 1 tsp
Fresh coriander leaves – ¼ cup
Sugar – ½ tsp
Salt to Taste


Method:

Step 01) Heat oil in a pan add sauf/fennel seeds and garlic and fry for 1 min. then add onion and fry till it turns to pink and then add besan flour mix well with onion and stir fry for a minute

 


Step 02) Add boiled mashed potato, red chili powder, hing, garam Masala powder, sugar, salt, fresh coriander leaves and sugar mix them nicely and sauté them for 2  mins.


 


Step 03) Lastly add boiled soya beans and mix them well in low flame for a minute and then switch off the gas. Let them cool for 3 to 4 minutes.

 

Step 04) Divide the mixture into equal portions and rolls them as a ball and give shape like patty/tikki (there is no need of any flour for dusting)


Step 05) Heat non stick tawa/griddle drizzle 2 teaspoons of oil once the griddle is hot enough place 4 to 5 patties and roast until bottom surface turn golden brown and flip each tikki and roast till turns to golden brown. Follow the same process for all the remaining patties.

 

 Serve: Serve hot with Mint Chutney or Tomato Sauce.

Mung Bean/ Moong Sprouts Chaat

In just few minutes you can prepare Mung Bean/Moong sprouts chaat at home. It is a mixture of sour and spicy delicious, flavorful, super tasty  healthy snack. You can make more interesting adding carrot, onion, tomato combination also.  This is a very healthy protein packed snack to munch with evening chai/tea.

Check out some of the recipes which i tried in Green Moong Sprout.


Ingredients:
  • Green Moong Sprouts – 1 Cup
  • Carrot – ¼ cup grated
  • Cumin Seeds – ½ tsp
  • Turmeric/ Haldi Powder – ¼ tsp
  • Coriander Seed Powder - ½ tsp
  • Cumin seed powder – ½ tsp
  • chili powder - ½ tsp
  • Chaat Masala Powder - ½ tsp
  • Lemon juice - 1 tsp
  • Fresh coriander leaves -
  • Few curry leaves
  • Salt to taste
  • Oil - 1 tbsp 

Time Required: 10 mins

Directions:

Step 01) Heat oil in pan, add cumin seeds after they splutter add haldi powder and curry leaves.

Step 02)Add the sprouts, fry for a few minutes and reduce the flame.

Add salt, coriander powder, jeera powder, chili powder and chaat masala powder.

Step 03)Stir fry for another few minutes, and then add lemon juice.


Step 04)Garnish with chopped fresh coriander leaves.

Variations: You can also add chopped onions and tomatoes to top.


 
  
 Serve: Serve with apple pieces and glass of lemon juice.

Pani Puri Recipe

Who would't like this Popular Indian street Pani Puri snack. In aboard, where we live it is little hard to get so i started to learn how to make Pani Puri at home. The main filling could be either boiled chickpeas, white beans or even mixed pulses mixed with smashed potatoes, for more crispiness chopped onion and coriander leaves, sweet chutney and dipped in tangy cooled spicy water, you can literately feel the explosion of many flavors in your mouth. Enjoy :)




In India, in Hindi language Pani means water and Puri is deep fried Indian flat bread, prepared with wheat flour or All Purpose Flour or Semolina (coarse wheat flour). The size varies from big, medium and small.  Big and medium puri served for breakfast with sabji/curry and small one served as snack just like this Pani Puri.


These are main fillings that you will need it for Pani Puri.

Puri - It is little time consuming to prepare, so i got from Indian store (will share the recipe soon!)
Boiled Beans and smashed Potatoes Filling
Pudina/Mint leaves, coriander leaves and greenchili Spicy Pani
Khajur/Dates & Imli/Tamarind ki Chutney
Chopped Onion and coriander leaves filling


Beans and Potatoes filling:

Ingredients for the filling:

Potatoes - 2 nos
White Beans/Mixed Beans - 1 cup
Coriander leaves - 1/4 cup
Lemon juice - 2 tsp
Salt to taste

Method:
Step 01) Cook the white beans or mixed beans & potatoes in a pressure cooker up to 2 whistles 
Step 02) let them cool for 30 mins. Then smash the potatoes
Step 03) Take a bowl add the cooked beans, smashed potatoes, salt, coriander leaves and lemon juice and mix it well


Mint /Pudina and coriander leaves green chili Spicy Pani:


For Grinding:
1 cup Mint leaves (Pudina leaves)
1 cup Fresh coriander leaves
2-3 green chilies
Ginger- small piece

For Masala Powders:
2 tbsp - PaniPuri Masala Powder(mixture of many Indian spices) available in Indian store
2 tbsp lemon juice
1 tsp sugar
salt to taste
Fresh coriander leaves for garnishing

Method:

Step 01) Grind the above mentioned ingredients smoothly
Step 02) Strain the mixture through a sieve and then mix with 2 cups of chilled water
 Step 03) Add pani puri masala powder,  lemon juice and sugar and stir it thoroughly
Step 04) Refrigerate it. More chilling enhance the tastes of the water. Always try to make the water one day before.


Sweet Chutney/  Date/Khajur and Tamarind/Imli ki Chutney:


Ingredients:

10 to 12 nos. of  Khajur/Dates
Olive size Imli / Tamarind 
2 tbsp Jaggery powder (Indian sweetener made from sugar cane juice) available in Indian store
1 tsp Jeera powder/Cumin seeds Powder
1 tsp Saunf powder / Fennel Seeds Powder
1 tsp Red Chili powder
1 tsp Black Salt or Chaat Masala
Salt to taste

Method:

Step 01) De seed the Dates and Tamarind and soak in water for about 10 mins
Step 02) Cook dates and tamarind together by adding 1 cup of  water in a heavy bottom pan
Step 03) Once it becomes soft add cumin seeds powder, fennel seeds powder, black salt/chaat masala and red chili powder.
Step 04) Add salt and jaggery powder. Stir well and cook till the mixture thickens.
Keep aside to cool down.
Step 05) Then blend it in a mixer and store it in a dry air tight container. Refrigerate and use as required.


How to serve the Pani Puri

Step 01) Keep every fillings ready on table
Step 02) Take a puri make a hole in the center big enough to fill the stuffing.
Step 03) First fill the beans and potatoes filling, Then fill the chopped onions and coriander leaves
Step 04) Add a tsp of sweet chutney i.e. dates and tamarind chutney
Step 05) Lastly immerse it in chilled spicy water and eat the whole poori/puri with the stuffing.

Bhel Puri /Puffed Rice Snack

Ingredients:
  • 2 cups puffed rice (murmura)
  • 1/2 cup chopped onions
  •  1/2 cup chopped tomato 
  • 4 tbsp Sweet Chutney (made from Dates and Tamarind)
  • 2 tbsp Green spicy Chutney (made from Mint and coriander leaves)
  • 1 tsp black salt or chaat masala
  • 1/2 tbsp lemon juice
  • salt to taste
For Garnishing
  • 1/2 cup Sev or Farsan / (Indian Fried Snacks - available in Indian store)
  • 10 Papadi (crushed) / (Indian Fried Snacks - available in Indian store)
  • 1 tsp grated raw mango
  • roasted peanuts
  • finely chopped coriander Leaves

Time Required: 10 mins


Method:

  1. Take a large bowl  add the puffed rice, then chopped onions tomatoes, lemon juice and chutneys. 
  2. You can vary the sweet and spicy chutney as per your taste buds.
  3. Then add the crushed papadis, sev/farsan , raw mango, roasted peanuts and chopped coriander leaves, mix well.
  4. Serve immediately.

Ingredients:

For Grinding:

1 cup Mint leaves (Pudina leaves)

Dahi Misal Chaat

I always think what to have for evening snack something very healthy....  Dahi misal chaat hot & sour flavor/chatpata snack gave me the answer. In language of Marathi and Hindi "dahi" means curd and "misal" in marathi means mixture. Mixture of boiled pulses, onion, tomato, fried snacks and spices are mixed in curd to bring the hot and sour flavor. This snack is very healthy, crunchy delicious in mix of all tastes and fills your heart as well as stomach!


Ingredients:
1 cup  - Boiled Pulses
1 cup -  curd / Yogurt
1/4 cup - Chopped Tomato
1/4 cup - chopped Onion
Coriander leaves for Garnishing

>Masala Powders:
3 tsp - chaat masala  (mixture of many Indian spices)
1 tsp - Red Chili Powder
1/4 tsp - turmeric powder
1/2 tsp - Salt

>For seasoning:
1 tsp - Mustard Seeds
1 tsp - udrud dal / White Lentils (grown in Indian subcontinent- Available in Indian Store)
3 tsp Oil for seasoning

>For Toppings:
Sev/ Bhujia ( Indian fried snacks - available in Indian Store)
Potato chips
Tortilla chips
(Any snacks which ever existing at home :)

Method:
1. Soak the pulses for about 3 hrs and then cook them in pressure cooker for 3 whistles. (If you forgot to soak the pulses  4 to 5 whistles


2.  In a medium flame heat a pan add 1 tbsp of oil, add the seeds and allow them to crackle


3. Add all above mentioned masalas together in a seasoning oil and fry them for 1 min. ( This gives a nice color & taste to the chaat)



4. Add onion saute till turns in to golden brown



5. Add the tomatoes fry them for 1 min



6. Add the cooked pulses and 1 cup of water mix nicely & cook for 2 mins. And switch off the gas



7. Take a bowl add 2 scoops of pulses gravy, and layer them with some raw chopped onion and  tomato, curd, and add any of the topping snacks and garnish with fresh coriander leaves
                   

 

 


 8. Serve this healthy, very filling, tasty guilt free snack at any time.

Chana Chaat

Ingredients:
  • 1 Cup Chana /Chickpeas
  • 1 small Onion chopped
  • 1 Tomato chopped
  • 1/2 cup boiled Potato chopped
  • 1/2 tbsp raw Mango chopped
  • Few Curry Leaves 
  • 2 tsp Chaat Masala (Mixture of many Indian spices - Available in Indian store)
  • 1 tsp Red Chili Powder 
  • Salt to Taste 
  • 2 tsp Lemon Juice 
  • Coriander Leaves/Cilantro for garnishing 
Time Required: 15 mins

Method:

1) Soak chana overnight. 
2) Pressure cook the soaked chana with 1/2 of cup of water for 2 whistles 
3) In a large bowl add raw onion, tomato, raw mango, boiled potato, curry leaves and mix well. 
4) Add cooked chana, lemon juice, salt, chaat masala and chili powder and mix well. 
5) Garnish with coriander leaves and farsan/fried Indian snacks
6) Serve immediately.

Murmura Bhel / Puffed Rice Guilt Free Snack

It is very simple, healthy, tasty, spicy and very quick guilt free snack.
 
Ingredients:

  • 4 cups Murmura/ Pori /Puffed Rice
  • 1/4 Cup Onion Chopped 
  • 1/2 Cup Tomato Chopped 
  • 1/4 Cup Carrot Grated 
  • 1/4 cup raw Mango 
  • 1 cup boiled corn (Optional) 
  • 1 to 2 Green Chili (Optional) 
  • 2 tbsp Roasted Peanuts (Optional) 
  • Fresh Coriander leaves/Cilantro chopped 
  • 2 tsp chaat masala powder (Mixture of many Indian spices - Available in Indian store)
  • Salt to taste 
  • Red chili powder - 1 tsp
  • 2 tsp Oil 

Time Required: 15 mins


Method:

Step 01)
In a large bowl add chopped onion, tomato, carrot, raw mango, corn, coriander leaves, 
 red chili powder, chaat masala, peanuts, salt and mix well.

Step 02) If you want really want spicy then add green chilies else red chili powder itself is enough

Step 03) Now add crisp puffed Rice/ Pori/Murmura and oil and mix well so that each grain of puffed rice is nicely coated with spicy mixture.

Serving: Serve immediately
